Security researcher jiska examined Apple's privacy document and noted that despite heavy local-processing framing, data is ultimately sent off-device through Private Cloud Compute and synced across a user's devices.
“However, towards the end of the processing chain, the data is sent to third parties (via PCC, which is no longer running on Apple's hardware) and synced across all of your devices.”

My first reaction on hearing this is to be glad that I'm into vintage mechanical watches. They won't listen to me or make notes on my conversations. They just tick tock along all day as long as I remember to wind them up. The apple watch just winds ME up.

Siri cannot tell whether I'm speaking English or French.
