They had to start at X depth as a sphere and add material going up, or carve down to X. If X was the Marianas Trench it might look doofy.

Our Mother, who was a teacher, purchased a similar globe for our home use. It was then, because of it's raised surface, that I first saw how neatly east S America tucked into the side of western Africa. I presented this thought in class and got ??? This was BEFORE plate tectonics were understood

I recall that my high school library had a similar globe but not as elaborate intended for visually impaired students but was invaluable for ALL students in understanding maps and topography.
