Instead of chicken, I use the cheaper high fat beef and GREEN or BLACK lentils. Add the cooked lentils, along with a squirt of liquid beef bouillon towards the end browning. They'll absorb the fat and juices and get 😋. We call it bleef. Don't use red or brown lentils. They disintegrate. It's 🤢

As a professional chef of 42+ years, who spent 3 of those working for hippies, in a primarily vegetarian restaurant; A really good substitute for ground beef, which doesn't change the flavor significantly, and also maintains the texture. You can sub in bulghur. Cooks quickly, and absorbs flavor.
